Mushroom + Kelp Miso Soup

This is a bowl of Mushroom and Kelp Miso Soup.


  • 2 cups of mushrooms {I used a variety}
  • 2 cups of homemade chicken bone broth
  • 2 Tbsp red miso paste {you can purchase this in the refrigerated section at most health food stores}
  • Bag of kelp noodles {rinsed well in water and chopped}
  • 2 carrots
  • 1 zucchini
  • Small onion
  • Clove of garlic
  • 2 Tbsp hemp seeds


  1. Wash and chop your carrots, zuchini, onion, garlic and mushrooms into bite sized pieces.
  2. On medium heat add your onion, mushrooms and a Tbsp of butter to your pot. Cook until onions are transluscent and mushrooms softened {about 5 minutes}. Then add garlic for 1-2 minutes.
  3. Add broth and bring to a simmer.
  4. Add your carrots and zucchini to the mixture and simmer for about 10 minutes until the vegetables are a little soft.
  5. After rinsing and chopping your kelp noodles add to the broth mixture and cook for a few minutes until they are warmed.
  6. Remove from heat and add the red miso paste. Mix well to combine.
  7. Pour into bowls and top with some hemp seeds.
