{healthified} PB Cups

This my friends, will knock your socks off. Forget the packaged PB cups that you swoon over and opt for these super easy to make, and insanely delicious sweet treat.

Our family and friends love them.

And when I made them for my husband for the first time, he was actually a little {lot} irritated it took me this long to make them for him….. ;)

Look at those beauties!

These would be an incredible dish to bring to your next festive holiday party. The best part is that they are easy to make in advance {yeah for stress free} and they will absolutely be a crowd favourite.

So here is the how-to….

  • 1 pack of dairy free chocolate chips OR a couple of chocolate bars {I always use at least 70% cacao OR you can get some dairy free/dark chocolate chips at most grocery stores in the natural or health food aisle}
  • 1/4 cup of coconut oil {you can play around with this amount}
  • A couple TBSP of coconut butter {different then coco oil and Giddy Yoyo is my go to brand}
  • 1-2 TBSP raw honey OR maple syrup
  • 1 TSP alcohol free vanilla extract
  • pinch of sea salt
  • Optional: 2 TBSP raw cacao powder

PB cup filling ingredients:

  • 1/2 cup natural peanut butter OR almond butter is my personal fav
  • 1 TBSP of raw honey
  • 1 TBSP of coconut butter
  • Option: You can chop up some raw almonds, cashews or even sprinkle some unsweetened coconut on top.

  • Using a double boiler melt your coconut oil and chocolate together. Add honey and cacao powder and mix well until nice and smooth.
  • Scoop approximately 1 TBSP of the chocolate mixture into each muffin tin with liners in it.
  • Put your tray into the freezer and let the chocolate cool for about 10-15 minutes.
  • While the chocolate is freezing mix all the PB filling ingredients together again over a double boiler. Whip until smooth.
  • Next, remove your muffin tin from the freezer and then scoop about 1 TSP of the PB mixture on top of the lightly frozen chocolate. Use the back of the spoon OR your fingers to spread this into a thin layer covering all of the chocolate.
  • Next scoop more of the chocolate mixture on top to cover the other two layers. I personally like to sprinkle a bit of sea salt and some shredded coconut on top of each one too.
  • Place back in the freezer for at least 30 minutes and they are done!

Feel free to keep them in the freezer or fridge but remove about 20 minutes before serving. Because of the coconut oil they will soften {best so serve with a  napkin :)} so if you feel they are too soft put them back into the freezer again.

Quick, easy, and an amazing way to make your fav chocolate and peanut butter combo healthified!

Sending you a big {virtual} hug on this Tuesday!

PS a big shout out and thank you to everyone who attended the Essential Oil webinar hosted by my friend Sara Bradford and I last week! The response was amazing so we will be planning more in the near future.
