Curried Butternut Squash + Apple Soup

I have had an unbelievable craving for homemade soups since the fall weather rolled in.

I picked up my final CSA basket from Lynn River Farm last week and there were so many great items that were super soup worthy. 

Here are two bowls of hearty goodness that have filled my tummy {and soul} on some cool fall days.

Curried Butternut Squash and Apple soup.


  • 3 cups homemade chicken bone broth
  • 1 medium sized butternut squash {peeled, seeded and baked - I did this in advance}
  • 1 cup chickpeas {cooked in your own kitchen OR store bought}
  • 2 apples
  • Clove of garlic
  • Thumb sized ginger
  • Curry powder {I used about 1/2 Tbsp.}
  • 1 Tsp. turmeric
  • Sea salt + black pepper to taste


  1. I already had the butternut squash and chickpeas cooked in advance so it was a matter of washing and chopping the apples, garlic, and ginger.
  2. Add all ingredients to a blender OR use a hand blender in your soup pot. Blend on high until smooth.
  3. Adjust flavour with your seasoning and you are done!

My blender has a warming option for soup, so that is what I used. But if you are using your blender, you can transfer to a pot and warm on the stove as necessary.

PS. Please do not use a microwave. It may take a couple extra minutes, but it's worth it for the health of you and the integrity of your food.

This makes an excellent vegetarian meal with lots of protein and flavour. Turmeric is an AMAZING spice to add to your pantry for all of it's incredible health benefits including it's anti-inflammatory and antioxidant properties.

Each week my basket was overflowing with a great variety of fruits and veggies through the spring, summer and fall. As a result of my weekly Wednesday pick-up, I rarely needed to attend a weekend Farmer's Market this summer because I had an abundance of local fresh goodies.

This was the first time I participated in a CSA weekly delivery and I was honestly, so impressed. I would highly recommend this as an option to get local and healthy produce to your table while also supporting sustainable and local farms. Thanks Mike and Lindsey, you guys do a great job!
