Seasonal & Local Recipe Inspiration

We had a spectacular afternoon celebrating our sweet baby girl. I can't even believe how fast that year went!

Post birthday cupcakes...I am continuing to be inspired by my CSA basket from Lynn River Farm. I love the convenience of receiving my weekly basket of produce. Here is some more recipe inspiration so that you can get creative in your kitchen.

Swiss Chard Roll Ups: I love the heartiness of Swiss Chard {in addition to it's powerhouse nutrition} and they are a perfect replacement for bread, a wrap or any other grain based product. I made a little mixture of canned salmon {I choose to use THIS brand on occasion} with cucumber, dill, tomato, garlic, celery, capers, stone ground mustard, and apple cider vinegar. Scoop some of the mixture at the base of the swiss chard leaf, then roll it! There are so many ways to have fun and stuff these little roll ups.

Seasonal Slaw: I used the rest of the salmon mixture {from the Swiss Chard Roll Ups above} and topped it off with a raw slaw of kale, green onion, cucumber, radish, drizzle of EVOO, apple cider vinegar, sea salt and black pepper to taste, and a dash of cayenne. I also added a dollop or two of greek yogurt on top to add a bit of creaminess.

This homemade slaw would also taste fabulous on a piece of fish and is a great way to EAT MORE RAW food in your meals.
